A: Endive is a delicious vegetable grown locally and sustainably here in Abbotsford. It’s grown from chicory roots and is the perfect complement to any dish.

A: Endive is a tangy vegetable with a bitter-sweet aftertaste.

A: Yes. Endive is rich in vitamins and minerals, especially folate, vitamins A and K, and is also high in fiber. Endive is also low in sodium.

A: Endive can be enjoyed in many ways. As a snack substitute for crackers, as a spoon for dips or other hors d’ourves, in soup, grilled or as a tangy kick to your favourite salad.

A: You bet. That’s why the leaves are yellow. When endive is exposed to light, the leaves turn green and typically form a more bitter taste.

A: Cover or wrap endive in a damp paper towel, to keep the leaves tightly bunched and store it in a cool, dark place.

A: Endive prep is simple and involves very little waste. Just cut the root end off, separate the leaves and you’re ready for whichever application you want.
